I had chicken thawing in the fridge, a bag of lemons in the crisper and a large, bushy basil plant that needed to be pruned. This quick and easy chicken bites recipe inspired by EatingWell allowed me to take advantage of all these items to make a delicious dinner for my husband and me.

Cooking Tip: Dried herbs can be used instead of fresh, but just be sure to use less.
To make these juicy, lemony, gluten-free chicken bites you will need skinless, boneless chicken thighs or breasts, salt, black pepper, olive oil, dry white wine, butter, fresh garlic, fresh herbs and a lemon for juicing. The tasty chicken dinner is on the table in about 20 minutes. So easy and delicious!

Ingredients
- 1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- 1 tablespoon olive oil
- 1/2 cup dry white wine
- 2 tablespoons butter
- 3 cloves garlic, grated
- 2 tablespoons fresh herbs, such as parsley, basil and/or dill, chopped
- 1 tablespoon lemon juice, or more to taste
Here's how to make it:
- Season chicken pieces with salt and pepper.
- Add oil to a large skillet over medium-high heat. Cook chicken until browned on both sides and cooked through, about 8 or 9 minutes. Transfer chicken pieces to a plate.
- Do not wash the pan. Add wine, butter and garlic to the drippings and browned bits and cook until the liquid is reduced by about half, 2 to 3 minutes. (If you don’t have dry white wine on hand, you can substitute very diluted white wine vinegar.)
- Return the chicken to the pan and toss to coat well in the butter garlic sauce.
- Remove from heat and stir in fresh herbs and lemon juice.
- Serve over mashed potatoes or rice, or all on its own.
