That grandma is me! My grandson loves this easy chicken and dumplings recipe – almost as much as my husband does. If you're craving comfort food fast, you can have a pot of chicken and dumplings on the table inexpensively, in less than an hour. Seriously! Nourishing comfort food at its finest.

This shortcut recipe requires only six simple ingredients. Here is your shopping list for this easy chicken and dumplings recipe: a whole chicken, celery, onion, a can of cream of chicken soup, flour tortillas and salt. The high-protein recipe cooks up on the stovetop in about 40 minutes, and that includes cooking the chicken! (Check out the health benefits of protein.)

Ladle the rich tender chicken, fluffy dumplings and seasoned broth into bowls for a delicious high-protein dinner. We'll eat this on its own, or sometimes I serve it with a salad as a side dish.

Ingredients

• 1 whole chicken (3 to 4 pounds)
• 8 cups water
• 2 teaspoons salt
• 3 ribs celery, chopped
• 1 small onion, chopped
• 10.5 ounces (1 can) cream of chicken soup
• 8 flour tortillas, cut into dumpling-sized squares
• chopped fresh parsley or dried parsley flakes (optional)

Here's how to make it:

1. Put the water, salt and the chicken in a large pot. Add the celery and onion and bring to a boil. Cook at a slow simmer until chicken is done, about 30 minutes. (I usually use salt to taste, but I actually measure the salt in this recipe. The 2 teaspoons is perfect.)
2. Remove chicken, cool slightly and remove the meat. Add the meat back to the pot along with the can of cream of chicken soup. (I season mine liberally with black pepper.)
3. Bring to a boil and add the flour tortillas. Boil, covered, about 8 minutes. Taste and add more salt and pepper, if needed. (For color, I add parsley flakes.) Store any leftovers in an airtight container in the fridge and reheat in the microwave.
