Ingredients
- 2 pounds boneless, skinless chicken breast
- 2 tablespoons extra virgin olive oil
- 4 tablespoons balsamic vinegar
- 28 ounces (2 cans) diced tomatoes, with liquid
- 1 cup onion, diced
- 4 teaspoons minced garlic
- 1 tablespoon fresh rosemary leaves
- 1 teaspoon dried oregano
- 5 ounces (1 bag) fresh spinach

Here's how to make it:
- Place the olive oil, balsamic vinegar, diced tomatoes, onions, garlic, rosemary and oregano into the slow cooker. Season with salt and pepper, to taste, if desired.
- Stir to combine.
