I love this healthy cookie recipe because we can have our treat and also get a good amount of nutrition at the same time. This delicious zucchini chocolate chip cookie recipe is so easy to make and pop into the oven for a snack or dessert.
Zucchini has many health benefits including a great punch of vitamin A, C, antioxidants and beta carotene. And this fun fact: zucchini is often considered a vegetable but is botanically classified as a fruit! Another bonus is the health benefits of dark chocolate.
To make these chewy zucchini cookies you will need fresh zucchini, old-fashioned oats, flour, kosher salt, baking soda, allspice, unsalted butter, light brown sugar, eggs, vanilla extract, dark chocolate chips and optional nuts.
Serve these quick and easy low-sodium oatmeal cookies as a healthier sweet snack during the day, or for dessert after dinner.

Ingredients
- 1 medium zucchini, grated
- 2 cups old-fashioned rolled oats
- 1 cup flour (whole-wheat flour, all-purpose flour or gluten-free flour)
- 1 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon allspice
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup light brown sugar, packed
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup dark chocolate chips
- 1/2 cup toasted nuts, chopped (optional)
Recipe Notes
- If you use salted butter, reduce the salt to 1/2 teaspoon.
- Cookies shown were made with gluten-free 1:1 flour.
- Press out the extra moisture from the grated zucchini before adding to the batter.
- You could use pecans, walnuts, almonds or even cashews in this recipe.
- Cookies will keep in an airtight container for up to one week.
Here's how to make it:
- In a mixing bowl with an electric mixer or the bowl of a stand mixer, cream the butter and sugar. Add egg and vanilla and mix until well blended.
- Add the oats, flour, baking soda, salt and allspice. Mix until just blended.
- Stir in the zucchini (make sure to take out the moisture in the zucchini), the chocolate chips and nuts, if desired. Blend well.
- Use an ice cream scoop to drop the dough onto a parchment paper-lined baking sheet at least 1 to 2 inches apart. Sprinkle with flaky salt, if desired.
- Bake in a preheated 375-degree F oven for 12 to 15 minutes or until done. Remove to a cooling rack and serve warm, if desired, and enjoy!
