I've never been a huge fan of coleslaw either until I discovered a similar recipe for a farro broccoli salad (food: Broccoli Farro Salad Recipe: This Grain Salad Recipe Is Just What the Doctor Ordered) that uses a nearly identical dressing (plus olive oil). Just made some the other night minus the farro (too lazy to wait on it), and used a bag of already chopped broccoli slaw (time saving!) plus some dried cranberries. The farro recipe calls for some toasted pepitas dipped in a maple syrup/coconut aminos/smoked paprika sauce before baking that add some toasted crunch. I love the smoked paprika flavor. I can see where your recipe would be very good on a pulled pork sandwich! The sweet/tangy/creamy flavors are great together!
