My hat's off to whoever created Watergate Salad, which was created during the Watergate scandal.
It was no surprise when this Watergate cookies recipe caught my eye. The fluffy dessert in cookie form? Sign me up. Watergate salad is a creamy mix of instant pistachio pudding, crushed pineapple (check out the health benefits of pineapple), whipped topping, pecans and mini marshmallows. While this cookie does not use all the ingredients in the batter (no crushed pineapple, whipped topping or marshmallows), the flavor is there.
