Ingredients
- 3/4 - 1 pound small Yukon gold, red or white potatoes, cut in half
- 1/4 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- parsley flakes, to taste
- 1 tablespoon olive oil
Here's how to make it:
- Put the cut potatoes into a mixing bowl. Add the garlic powder, smoked paprika and parsley flakes, to taste. Drizzle with the olive oil.(If you want one less dish to wash, mix the potatoes, olive oil and seasonings directly in the baking dish.)
- Toss the potatoes to coat in the seasonings and oil. (Adjust the amount of seasonings to fit your tastes. You could also add some onion powder. If you prefer, omit the parsley flakes and garnish after baking with fresh chopped parsley.)
- Pour the potatoes into a baking dish.
- Bake in a preheated 350-degree F oven until crispy on the outside and creamy on the inside, about 40 minutes. (All ovens are different, so start checking the potatoes at about 30 minutes.) Store any leftover potatoes in an airtight container in the fridge for up to five days.
