To make these creamy cheese, herb and garlic potatoes you will need Yukon gold potatoes, broth, Boursin garlic and herb cheese spread, fresh chives and butter. The potato side dish is ready in about 25 minutes from start to finish.

Ingredients

  • 2 - 2 1/2 pounds Yukon gold potatoes, washed and cut into chunks
  • 3/4 cup broth (vegetable broth or chicken broth)
  • 5 ounces Boursin garlic and herb cheese
  • 2 tablespoons fresh chopped chives
  • butter, for serving

  • You can use chopped green onion tops instead of chives, or a combination of both.
  • If you prefer to peel your potatoes, do it!
  • Red, white or russet potatoes could be substituted for the Yukon gold. Yukon gold are preferred because of their buttery taste.
  • If you want these potatoes to be vegetarian, use vegetable broth instead of chicken broth.

Here's how to make it: 

  1. Cook the potatoes in boiling, salted water until tender, about 15 minutes. Drain well and put them back into the pot. 
  2. Add the broth. Use a potato masher to mash the potatoes and broth together until smooth. 
  3. Stir in the Boursin cheese until melted and thoroughly combined. Season to taste with salt and black pepper. 
  4. Put the potatoes into a serving bowl and top with butter and the chives.
