Air fryer recipes are on my radar. I don't use my air fryer that often, and I am trying to change that. One thing I love about air fryers is how crispy they can get foods, like this easy butternut squash recipe. This air fryer butternut squash is soft on the inside and crunchy on the outside. Not only do I get a delicious side dish, appetizer or snack, but I also get all the health benefits of butternut squash. Win-win.
This low-sodium air fryer vegetable recipe is simple to prep and cooks up in about 15 minutes. You don't need a lot of ingredients for this recipe, either. Here is your short shopping list: butternut squash, eggs, flour, panko breadcrumbs, smoked paprika and ground cinnamon. The smoked paprika and cinnamon play nicely together and create a tasty coating for the squash.
These crispy butternut squash slices can be served as a side dish with dinner, as a snack or as an appetizer with a dipping sauce.

- 2 eggs
- 1/2 cup flour
- 2 cups panko breadcrumbs

Recipe Notes
- I used a vegetable peeler to peel the butternut squash.
- This recipe can be cut in half, which I did. I saved the other half of the squash for another night.
- Try this recipe with acorn squash or pumpkin.
- Don't crowd the basket or tray. You may have to cook two batches.
Here's how to make it:
- Preheat the air fryer to 370 degrees F. Peel the butternut squash and cut the ends off. Slice the squash in half lengthwise and remove the seeds. Cut into 1/2-inch thick slices.
- Put the eggs into one bowl and beat together. Put the flour in another bowl and the panko, smoked paprika and cinnamon into a third bowl. Season with salt and pepper, to taste.
- Dip each piece of butternut squash into the flour, then into the egg, then into the panko.
- Place on the air fryer tray or in the basket. Mist the top with nonstick cooking spray.
- Cook for 7 minutes, then flip the squash over, mist with cooking spray and continue to cook for 7 to 8 more minutes, or until golden and crispy.
