The creamy salad is full of fresh vegetables, spices, crunchy nuts and other flavorful ingredients.

To make this easy vegan recipe you will need to gather the following ingredients: a can of chickpeas, vegan mayonnaise, celery, red onion, green onions, chopped nuts, Dijon mustard, a lemon for juicing, garlic powder, vegan chicken spice or poultry seasoning, vinegar and dried dill. The gluten-free ingredients are mixed together to create a vegan salad full of flavors and textures. So delicious!

• 1 can (15 ounces) chickpeas, rinsed and drained well
• 3/4 cup vegan mayonnaise
• 3 stalks celery, chopped fine
• 1/4 cup finely chopped red onion
• 2 green onions, chopped fine
• 1/2 cup chopped nuts
• 1 teaspoon Dijon mustard
• 1 tablespoon fresh lemon juice
• 1/2 teaspoon garlic powder
• 1/2 teaspoon vegan chicken seasoning or poultry seasoning
• 1/2 teaspoon vinegar
• 1 teaspoon dried dill

Recipe Notes

• Pecans, almonds, cashews or walnuts all work in this vegan chicken salad recipe. If you can't eat nuts, omit them.

• Store the salad in an airtight container in the fridge for up to five days.

1. Put the chickpeas into a mixing bowl. Using a fork or potato masher, gently mash, but leave some texture.
2. Add the remaining ingredients. Season with salt and black pepper.
3. Mix well.
