Recipe Notes

  • Instead of pineapple juice, you could use white grape juice or pineapple juice. I used pineapple and it was delicious!
  • Neutral high-smoke oils include canola, avocado and vegetable.
  • This bourbon chicken would also be delicious over farro, quinoa or your favorite grain.
  • To make this recipe gluten-free, use gluten-free soy sauce or tamari.

Here's how to make it:

  1. In a small bowl mix soy sauce, bourbon, juice, vinegar, maple syrup or honey, garlic, ginger and crushed red pepper.
  2. In a large bowl coat your chicken with 1 tablespoon of cornstarch.
  3. Place oil in a large skillet and heat on medium-high for about 1 minute. Add chicken and cook until browned, about 5 to 8 minutes.
  4. Add the bourbon sauce and keep cooking and stirring until the liquid is cooked down and coating the chicken, another 5 to 6 minutes. While the chicken cooks combine 1 tablespoon cornstarch with the water in a small bowl. Mix well and pour onto the chicken and cook for another 1 to 2 minutes.
  5. Serve over cooked rice and top with green onions, if desired. Enjoy!
