Rosalynn Carter's Strawberry Cake Recipe: A Treasured Family Recipe Cakes/Cupcakes Desserts Fruit

Rosalynn Carter, former first lady and wife to Jimmy Carter (99), has died at the age of 96. According to The Carter Center, she died peacefully in her home on November 19, 2023. The couple celebrated their 77th wedding anniversary in July, and were the longest-married couple in presidential history. The Carters have four children and almost a dozen grandchildren and great-grandchildren.

It's not a surprise that Rosalynn Carter had some cherished recipes that she collected over her long life. This moist strawberry cake is one of her family recipes. The simple strawberry cake is made with a box cake mix, a box of strawberry gelatin, vegetable oil, chopped nuts, eggs, flour and frozen strawberries. Just mix all the ingredients together and bake in a bundt pan.

• 1 box (16 ounces) yellow or white cake mix
• 1 box (3 ounces) strawberry gelatin
• 3/4 cup vegetable oil
• 1 cup chopped nuts
• 4 eggs
• 2 tablespoons flour
• 1 bag (10 ounces) frozen strawberries

Recipe Notes

• Instead of frozen strawberries, you can substitute a pint of fresh strawberries mixed with 1/2 cup granulated sugar.

• You could use walnuts or pecans, or a combination of both.
• Serve plain or with whipped cream or ice cream.
• Store leftovers in an airtight container.

1. Combine all the ingredients in a mixing bowl. Mix well. 
2. Pour the batter into a greased bundt pan. 
3. Bake in a preheated 350-degree F oven for about 45 minutes to 1 hour (ovens vary).
