The flavor combination created by sweet maple syrup and savory soy sauce is absolutely delicious. Here's your easy shopping list for this moist and flavorful dinner recipe: chicken thighs (read about the health benefits of protein), maple syrup, soy sauce, Dijon mustard and apple cider wine vinegar. You whisk together the sauce then spread it over the chicken in a baking pan. Then you just bake it until it's golden.
Cooking Tip: Instead of regular soy sauce, you can use low-sodium soy sauce, gluten-free soy sauce or tamari.
This Asian-inspired gluten-free chicken dinner recipe is impressive enough to make for company but simple and quick enough to make for dinner any night of the week. I served this juicy baked chicken over rice, but it would be equally happy over quinoa or pasta, and with any of your favorite vegetable side dishes.
Cuisine: American / Asian
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 6
Ingredients
- 1 1/2 pounds boneless/skinless chicken thighs (about 6 thighs)
- 6 tablespoons maple syrup
- 3 tablespoons soy sauce
- 1 1/2 tablespoons Dijon mustard
- 1 1/2 teaspoons apple cider vinegar
Here's how to make it:
- Place the chicken in a casserole dish or baking pan lined with aluminum foil. Season with salt and pepper, if desired. (I lined my baking pan with aluminum foil to make cleanup easier.)
- In a mixing bowl, add the maple syrup, soy sauce, Dijon mustard and apple cider vinegar. Whisk to combine. (If you don't have maple syrup, you can substitute honey.)
- Pour the sauce over the chicken in the pan, ensuring the chicken is covered in the sauce.
- Bake the chicken at 350 degrees F for about 20 to 25 minutes, or until desired doneness. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Remove from oven and serve over rice and/or with your favorite side dishes. Store leftovers in an airtight container in the refrigerator.
