Broccoli crowns are always in my refrigerator. Not only does broccoli have health benefits, but it's easy to cook, a crowd pleaser and is versatile. Instead of broccoli with cheese sauce, I tried this easy broccoli gratin recipe for dinner. Everyone asked for seconds and a copy of the recipe!
To make this easy broccoli casserole recipe you will need fresh broccoli, butter, flour, milk, nutmeg, garlic powder, Swiss cheese and breadcrumbs. The breadcrumbs are optional, but do add a nice crunch to the top. You start by making a homemade cheese sauce, or roux, then pour it over steamed broccoli. Bake for about 20 minutes and serve. Ingredients
- 1 1/2 pounds broccoli, cut into florets,
- 6 tablespoons butter
- 6 tablespoons flour (all-purpose or gluten-free flour)
- 2 1/2 cups milk, at room temperature
- dash of nutmeg
- 1/2 teaspoon garlic powder
- 1 1/2 cups grated Swiss cheese
- 1/2 cup fresh breadcrumbs (optional)
Here's how to make it:
- Put the broccoli florets into a steamer or boiling water and cook until slightly tender, about 3 minutes. Drain well and put into a 9x9-inch baking dish or similar size casserole dish. Set aside.
- To make the cheese sauce, melt the butter in a skillet over medium heat. Whisk in the flour until smooth. Slowly start whisking in the room temperature milk until it is smooth. Cook, stirring often, until thickened, about 2 to 3 minutes. Add the garlic powder, nutmeg, salt and pepper to taste, and half of the cheese. Stir until cheese is melted. (If the cheese sauce is too thick, add more milk. If you don't like Swiss cheese, use gruyere, fontina, mozzarella or cheddar. For a gluten-free side dish, use gluten-free flour and breadcrumbs.)
- Pour the sauce over the broccoli. Top with the remaining cheese and breadcrumbs, if using.
- Bake in a preheated 350-degree F oven for about 20 minutes. Store any leftovers in an airtight container and reheat in the microwave. This recipe can easily be doubled and baked in a 13x9-inch baking dish.
