I needed a quick vegetable side dish to go with some Bolognese pasta I was serving for dinner. I had recently been to my local farmers market and bought some farm fresh spinach and tomatoes. It turned out that was the perfect combination to make this easy Mediterranean spinach and tomatoes in red wine vinaigrette. It's a healthy and savory farm-to-table side dish I'll be making again!
The red wine vinaigrette salad dressing is so easy to make. It's simply olive oil, red wine vinegar and fresh lemon juice. The rest is even easier: a bunch of fresh spinach and two large ripe tomatoes. You sauté the vegetables in the dressing and voila! About five minutes later, you're serving up a wholesome, simple and tasty vegetable side dish you can feel good about.
This simple salad dressing recipe is also good on green salads or pasta salads. To garnish the tomatoes and spinach, you could add some feta or Parmesan cheese. Here's how to make it:

- Add the tomatoes and sauté with the spinach until tomatoes are soft and integrated into the spinach, about 3 minutes.
