My god-daughter Zari visited for a few days last week, and if she could, she'd spend the whole time cooking and baking together. This delicious coffee cake cookie recipe bakes up 12 large cookies reminiscent of cinnamon crumb coffee cake, but in a cookie form. These sweet cookies are yummy. We made them very easily in less than 30 minutes.
Here is your shopping list to make these easy coffee cake cookies: butter, brown sugar, granulated sugar, eggs, vanilla extract, baking powder, baking soda, salt, ground cinnamon, cornstarch, all-purpose flour, powdered sugar and milk. The cookies are baked with a crumbly topping and then topped with a sweet glaze. Delicious!

Ingredients
Cookies
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 egg yolk, at room temperature
- 2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 3/4 cups all-purpose flour
Topping
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- pinch of salt
- 4 tablespoons butter, softened
Glaze
- 1 cup powdered sugar
- good sprinkle of ground cinnamon
- 1 - 2 tablespoons milk
Here's how to make it:
- Line two baking sheets with parchment paper. To make the cookie dough, place the butter and sugar in a large mixing bowl. Blend thoroughly with an electric or stand mixer on medium-high until the mixture is blended well and fluffy. (If you use salted butter, omit the extra 1/2 teaspoon of salt.)
- Add the egg, egg yolk and vanilla and mix together on low.
- Slowly add in the baking soda, powder, cornstarch flour and salt (if you are using). Mix on low until mixture is just blended (don't over mix).
- Using a spoon or ice cream scoop place 6 balls of dough (about 3 tablespoons each) on each baking sheet. Make a small well in each scoop where we will place the crumb topping.
- Make the crumb topping by adding all the crumb ingredients into a medium bowl.
- Using your clean hands or a fork, work the ingredients together.
- Place a small amount of the crumb topping in the center well of the cookie dough.
- Bake cookies for 10 minutes or until golden brown. Remove from oven and let cool.
- When ready to eat make glaze by combining ingredients. Start with 1 tablespoon of milk and add more if needed, then drizzle on cooled cookies and enjoy! Store the cookies in an airtight container.
