While we love chicken soup, vegetable soup and hamburger soup, sometimes it's fun to break out of the rut and make something completely different. This easy potsticker soup recipe is delicious, and will be a new favorite, especially if you're a ramen or pho fan.

You don't need many ingredients to make this flavorful Asian-inspired soup recipe. Here is your simple shopping list: olive oil, shiitake mushrooms, fresh garlic, fresh ginger root, green onions, broth (chicken, vegetable or beef), low-sodium soy sauce, a package of frozen potstickers or dumplings, and fresh chives, for serving. The soup cooks up on the stovetop in 10 quick minutes.

Serve this soup for lunch or for dinner with a fresh salad or even a crispy eggroll.

Ingredients

  • 1 tablespoon olive oil
  • 8 ounces shiitake mushrooms, sliced
  • 3 garlic cloves, minced
  • 2 teaspoons grated fresh ginger
  • 1/3 cup sliced green onions, plus more for garnish
  • 4 cups broth (beef, chicken or vegetable)
  • 2 cups water
  • 3 tablespoons sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1 package (12 ounces) frozen potstickers or dumplings
  • fresh minced chives, for garnish

  • This soup is best eaten right away so the dumplings or potstickers don't get mushy.
  • If you don't like or can't find shiitakes, use your favorite mushrooms. Don't like mushrooms? Leave them out.
  • Use whatever flavor potstickers you like.

Here's how to make it: 

  1. Heat the olive oil in a large soup pot over medium heat. Add the mushrooms, green onions, garlic and ginger. Cook, stirring, until the mushrooms are soft, about 3 minutes.
  2. Add the broth, water, sesame oil and soy sauce. Season with salt and black pepper. Bring to a gentle simmer. Once simmering, add the potstickers and cook until heated through, about 3 to 5 minutes. 
  3. Ladle the soup into bowls and sprinkle with chopped green onions, fresh chives and a drizzle of sesame oil.
