My latest avocado fave is this easy and delicious avocado salad dressing recipe. It's so luscious that you can even use it as a vegetarian sandwich spread or a vegetable dip.

Your shopping list for this ultra creamy avocado sauce recipe is short and sweet: an avocado, olive oil, fresh lemon juice, garlic, Mediterranean or Italian seasoning and water. You blend the ingredients until you reach your desired consistency, then in 5 minutes, you're ready to drizzle it onto your favorite salad or spread it onto your favorite breads or vegetables.

Recipe Notes

  • Fresh lemon juice is best, but If you don't have a fresh lemon, you can use bottled lemon juice.
  • If you don't have fresh garlic or minced garlic in a jar, you can use 1/4 to 1/2 teaspoon of garlic powder.
  • Start with 1 cup of water and see how thick the dressing is. If it's too thick, add additional water, 1/4 cup at a time, until you reach the desired consistency. You can store the leftover dressing in an airtight container in the refrigerator for up to five days.

Here's how you make it:

  1. Put all the ingredients except the water into a blender. Add salt and pepper to taste, if desired.
  2. Blend until smooth. Stop the blender and add the water slowly. Blend until smooth, adding additional water if needed until you reach the desired consistency.
  3. Serve over your favorite salads or use as a dipping sauce for vegetables or as a sandwich or cracker spread.
