These simple grilled chicken and vegetable kebabs make summer dinners easy, breezy. With Asian-inspired flavor, you’ll want to make these chicken and veggie skewers all summer long.

All you need for this quick chicken dinner is chicken breast, olive oil, soy sauce, honey, garlic, green pepper, onion and mushrooms. Once on the skewer, these kebabs grill quickly and satisfy immensely.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 teaspoon minced garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • a few mushrooms, for skewer end caps

  • Store any leftovers in an airtight container in the refrigerator for up to three days.
  • Chicken should be cooked to 165 degrees F on a meat thermometer.

Here’s how to make it: 

  1. In a large mixing bowl, add the olive oil, soy sauce, honey, garlic and red pepper flakes. Whisk to thoroughly combine.
  2. Add the chicken, green pepper, mushrooms and red onion to the marinade in the mixing bowl. Toss to coat in the mixture.
  3. Allow to marinate in the refrigerator for 1 hour. Heat your grill to medium-high heat.
  4. Place the chicken and vegetables onto the skewers, alternating the order of ingredients. Mushrooms can be on the end of the skewers.
  5. Cook for up to 10 minutes on each side, or until chicken is cooked through to your desired doneness. Chicken should be cooked to 165 degrees F on a meat thermometer. Serve immediately.
