Super Moist Lemon Poke Cake Recipe Is a Lemon Lover's Dream Cakes/Cupcakes Desserts

This super moist lemon poke cake recipe starts with a box of yellow cake mix. We love cake mix cake recipes! Besides a box of yellow cake mix, you'll need a small box of instant lemon pudding, vegetable oil, water, eggs, powdered sugar, butter and fresh lemon juice. After the cake comes out of the oven, poke holes all over the top and pour on the simple lemon glaze. Double the moistness!

Serve this lemon cake for dessert or a sweet snack. It's delicious served with fresh blueberries or raspberries. The tartness of the berries complements the cake perfectly.

Here's how to make it: 

  1. Stir together the cake mix, lemon pudding mix, eggs, vegetable oil and water in a mixing bowl. Pour the batter into a greased 13x9-inch baking pan. 
  2. Bake in a preheated 350-degree F oven for about 30 to 35 minutes.
  3. To make the glaze, stir together all the ingredients. 
  4. While the cake is still hot, poke holes all over it with a skewer or chopstick. Pour the glaze over the cake.
