Apples are at the top of the favorite fruit list every year in many states. Apples can be used for dessert, dinner, breakfast, brunch and snack recipes. This easy apple crisp recipe is different because it uses coconut oil and almond meal. It's delicious for dessert or even brunch or breakfast.

To make this coconut oil apple crisp recipe you'll need the following ingredients: apples, almond meal, ground cinnamon, coconut oil, honey, rolled oats, pecans and salt. The butter and flour-free crisp bakes in the oven until the apples are tender and the topping golden. Serve this fruit crisp with a big scoop of vanilla ice cream or whipped cream on top.

Ingredients

Apples

  • 4 Opal® apples, chopped (or your favorite apple)
  • 2 tablespoons almond meal
  • 1 teaspoon cinnamon

Topping

  • 3/4 cups plus 2 tablespoons coconut oil (in liquid form)
  • 1/2 cup honey
  • 1 1/4 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup almond meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

  • Plan to let the apple crisp sit about 15 minutes or so before serving. 

Here's how to make it: 

  1. Toss the apples with the almond meal and cinnamon and spread in a single layer in a greased 13x9-inch baking dish.
  2. Whisk the coconut oil and honey together until smooth. Place the rolled oats, pecans, almond meal, cinnamon and salt in a large bowl. Add the coconut oil and honey mixture. Stir to combine.
  3. Pour the oat mixture over the apples to cover them evenly. Bake in a preheated 350-degree F oven for 30 to 40 minutes until the topping is browning slightly. Let stand for 15 to 20 minutes.
