Easy Moist Fresh Plum Cake Recipe Celebrates the Summer Fruit Cakes/Cupcakes Desserts

My brother-in-law and sister-in-law grow all sorts of fruitsvegetables and herbs. They have a plum tree that delivered already this year. They posted an amazing looking plum cake recipe that they baked with their kids, and I knew I had to have that dessert recipe for myself – and to share with the 30Seconds community.

For this moist plum cake recipe you need a box of cake mix, eggs, water, canola oil, butter, brown sugar, ground cinnamon and chopped fresh plums. The cake mix, eggs, water and oil are stirred together in a bowl to create the cake batter. The chopped plums are tossed with the brown sugar, melted butter and cinnamon, then spread evenly into the cake pan. Pour the cake batter over the top and bake until a toothpick comes out clean.

The easy plum cake can be inverted onto a plater and served in an upside-down style. But note that if your plums are extremely ripe and soft, this may not be possible and you'll have to serve it out of the cake pan. Either way it is delicious. Serve this plum cake with a big scoop of vanilla ice cream on top.

Ingredients 

  • 1 box (15 ounces) white or yellow cake mix
  • 3 large eggs
  • 1 1/3 cups water
  • 1/3 cup canola oil
  • 1/2 cup butter (1 stick), melted
  • 1 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 5 cups plums, chopped or sliced

Here's how to make it: 

  1. Stir together the cake mix, eggs, water and oil in a large bowl with an electric mixer on low speed.
  2. In another bowl, stir together the brown sugar, cinnamon and melted butter. Add the chopped plums and stir.
  3. Put the plums onto the bottom of a 13x9-inch baking pan. Pour the cake batter over the top.
  4. Bake in a preheated 325-degree F oven for about 35 to 45 minutes or until a toothpick comes out clean. Cool on a wire rack for about 15 minutes to allow cake to absorb any liquid created by the plums.
