10-Minute Fresh Tomato Cucumber Salad Recipe Is the Side Dish of Summer Salads Side Dishes Vegetables

Cucumbers are one of the stars of summer vegetable gardening. Cucumber salads are a fun side dish option in warmer months. Not only are they light, refreshing and delicious, but healthy, too. The health benefits of cucumbers are vast, plus they are a hydrating vegetable.

This cucumber and tomato salad was created because of what I had fresh on hand: cucumbers, tomatoes and fresh dill. With the addition of a sliced shallot, fresh lemon juice and olive oil, I had a tasty cucumber salad as a side dish for dinner or lunch. Simply toss together all the ingredients. Add a much or little lemon juice, olive oil and Tuscan seasoning as you like. I added the juice of half of a big lemon, a couple teaspoons of olive oil and a sprinkling of Tuscan seasoning. If you don't have a shallot, you could use red onion instead.

Ingredients

  • 1/2 an English cucumber (seedless) or 2 regular cucumbers, sliced
  • 2 - 3 Roma tomatoes, sliced
  • 1 shallot, sliced
  • fresh chopped dill (or your favorite fresh herbs)
  • juice of 1/2 a lemon (or to taste)
  • olive oil
  • Tuscan seasoning or dried Italian seasoning (optional) 

Here's how to make it:

  1. Put the cucumber, tomatoes, shallot and fresh dill into a bowl.
  2. Add the lemon juice, Tuscan seasoning, to taste, and drizzle with olive oil. Season with salt and pepper, if desired. Toss to coat. Serve immediately or let it sit at room temperature until ready to serve.
