We love when our readers submit recipes to 30Seconds. John W. sent us his recipe for Uncle John's Old Bay chicken soup and the ingredient list made our stomachs growl. This is one flavor-packed chicken soup recipe!

John makes this chicken soup in an Instant Pot™ so he only has one pot to clean. We love that. (You could also make this soup in a slow cooker.) The slight twist on this soup recipe is that the chicken is marinated overnight in a spicy chicken marinade from the back of the Old Bay seasoning can. Yum, right?

To make John's chicken soup recipe you'll need 3 to 5 pounds of chicken parts. John prefers chicken wings because they are easy to serve, but he sometimes uses a pork loin instead. The chicken is marinated in olive oil, lime juice, Old Bay, parsley flakes and ground black pepper overnight in the fridge. When ready to cook, put the chicken and marinade into the pressure cooker along with fresh garlic, white wine, canned diced tomatoes, cannellini beans, frozen spinach and water or broth. The soup cooks for just 20 to 25 minutes.

John says the marinated chicken can also be grilled instead of used for the soup. He likes to serve this savory chicken soup over rice or noodles for dinner (as pictured) with some shredded cheese on top.

Ingredients

Soup

• 3 - 5 pounds chicken parts or boneless pork loin (John prefers chicken wings)
• 1 tablespoon minced garlic
• 1/2 cup white wine (John uses white zinfandel) 
• 2 - 3 cans (14 ounces each) diced tomatoes (John uses Del Monte with garlic, basil and oregano)
• 1 - 2 cans (14 ounces each) cannellini beans
• 1 box (10 ounces) frozen chopped spinach
• water or chicken broth

Spicy Chicken Marinade

• 3/4 cup olive oil (original recipe calls for 1/4 cup)
• 2 tablespoons lime juice (original recipe calls for lemon juice)
• 2 tablespoons Old Bay Seasoning (original recipe calls for 1 tablespoon Old Bay)
• 1 teaspoon parsley flakes
• 1/4 teaspoon ground black pepper

Here's how to make it: 

1. Prepare the spicy chicken marinade. Marinate the chicken overnight in the refrigerator. 
2. Put the chicken and marinade in a pressure cooker. Add the garlic, wine, canned tomatoes, cannelloni beans and frozen spinach. Top it off with water or chicken broth. 
3. Cook for about 20 to 25 minutes in the pressure cooker.
