Cook Time: 12 to 15 minutes
Total Time: 20 minutes
Servings: 4
Ingredients
- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons honey mustard
- 2 teaspoons chopped fresh thyme (divided)
- 2/3 cup panko breadcrumbs
- 4 teaspoons olive oil
- 2 tablespoons chopped flat-leaf Italian parsley
- 1/2 teaspoon smoked paprika
Recipe Notes
- You could use dried thyme if you can't find fresh.
- For a gluten-free dinner, use gluten-free panko breadcrumbs.
- If you don't have honey mustard, any mustard can be substituted. Just keep in mind that it will affect the flavor. Dijon mustard, for example, would add a twang from the wine and a spicy brown mustard would add a bit of heat.
Here's how to make it:
- Stir together the honey mustard and half of the thyme. In another bowl, stir together the panko, remaining thyme, olive oil, parsley and smoked paprika.
- Season the salmon with salt and black pepper. Put them onto a greased baking sheet, skin side down. Spread the honey mustard mixture on top of the salmon, then sprinkle with the panko mixture.
- Bake the salmon in a preheated 400-degree F oven for 12 to 15 minutes or until fish flakes easily.
