Crispy Smashed Baked Potatoes Recipe With Bacon & Fresh Herbs Side Dishes Vegetables Appetizers

Smashed potatoes are all the rage right now. But we noticed that none of the "crash hot" potato recipes had bacon in them. What? We decided to change that with this easy crispy smashed baked potatoes recipe with bacon. Not only bacon, but also fresh herbs to brighten things up. You're going to love this potato recipe.

The ingredient list is short for these crispy baked potatoes: Yukon gold potatoes, olive oil, bacon and fresh herbs. The potatoes are boiled until just tender, carefully flattened, brushed with olive olive and seasoned with salt and pepper, then baked until crispy. When crispy, sprinkle with cooked bacon and fresh herbs.

Use a combination of whatever herbs you like for this recipe. Rosemary, thyme, basil, oregano and parsley would be delicious. If you want to load up these potatoes, sprinkle with some grated cheese and dollop with sour cream. Serve these smashed potatoes as a side dish or appetizer with ranch dressing or dip.

Ingredients

  • 2 pounds small Yukon gold potatoes
  • olive oil
  • 4 - 5 slices bacon, cooked crisp and crumbled
  • 2 tablespoons chopped fresh herbs

Here's how to make it: 

  1. Boil the potatoes in salted water until just tender, about 15 minutes. Drain and cool slightly. 
  2. Put the potatoes onto a baking sheet. Press each potato with the bottom of a drinking glass or potato smasher until flattened but still holding together. Drizzle with olive oil and season with salt and pepper. 
  3. Bake the potatoes in a preheated 450-degree F oven for about 25 to 30 minutes or until golden brown and crispy. Sprinkle with the crumbled bacon and fresh chopped herbs.
