​Air Fryer Baked Potato Recipe: Crispy on the Outside, Fluffy on the Inside Air Fryer Recipes Side Dishes Vegetables

I love having an air fryer. I bought it for my husband, mainly because he loves making chicken wings, but I love it, too, and for so much more than chicken wings.

This air fryer baked potato recipe is super easy and the potatoes come out with a crispy skin and a soft and fluffy inside. You can customize them by adding your favorite toppings like butter, sour cream, grated cheese, queso, chili, bacon bits, chives, chopped green onions or cooked broccoli.

All you need are russet potatoes and extra virgin olive oil – and an air fryer, of course! The potatoes are rubbed with olive oil, salt and black pepper, then cooked in the air fryer for about 45 minutes. While the potatoes cook, finish the rest of your dinner!

Ingredients:

  • 3 russet potatoes, washed and dried well 
  • 3 tablespoons extra virgin olive oil or canola oil

Here’s how to make it:

  1. Preheat air fryer to 400 degrees F. Rub potatoes with olive oil and season with salt and pepper, to taste. Do not wrap potatoes in foil!
  2. Place the potatoes in the air fryer basket and cook for 40 minutes (the time may need to be adjusted based on your air fryer and size of potatoes; keep an eye on them). Check whether or not potatoes are done by inserting a knife into the center of the potatoes, if it goes in and comes out easily, they are done. If the knife gets “stuck,” fry for another 5 to 10 more minutes. Serve with your favorite toppings.
