Ted Lasso's Biscuits Recipe: Experience Shortbread "Biscuits With the Boss" at Home Cookies Desserts Snacks British Recipes

Am I the only one in love with Jason Sudeikis' character, Ted Lasso? Quirky, kind-hearted Ted started out the first episode of Ted Lasso by giving his boss, Rebecca, a pink box of English biscuits. Rebecca continued to receive a box of the classic shortbread cookies from Ted every day going forward. (Lucky, Rebecca!) Lucky for us, Apple TV+ released the official Ted Lasso biscuit recipe so fans of the show could experience "biscuits with the boss" at home.

The biscuits have just four simple ingredients: butter, powdered sugar, all-purpose flour and coarse salt. The shortbread dough comes together in a stand mixer before being patted into a square metal baking pan. You can use an 8-inch baking pan or 9-inch pan, but note that the size of the pan will affect the baking time and thickness of the biscuits. If you like your shortbread with holes on the top, use a fork and do it before they're baked. (Ted doesn't do this, but it's your call.)

Enjoy these shortbread cookies as a snack, for dessert or with tea or coffee. Why not surprise your boss with a small box of these tender biscuits like Ted does? Maybe not every day, because face it, we're not all as nice as Ted.

Ingredients

  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 3/4 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon coarse salt

Here's how to make it: 

  1. In a stand mixer, beat the butter until fluffy, about 3 to 5 minutes. Keep the motor running and start adding in the powdered sugar. Beat until fluffy and pale. 
  2. Turn the mixer off and sift the 2 cups of flour into the bowl. Add the salt. Mix on low until just combined. 
  3. Transfer the dough to a buttered 8- or 9-inch metal baking pan. Pat until the dough is an even thickness. Put it into the refrigerator for 30 minutes. Preheat the oven to 300 degrees F while the dough chills. 
  4. Using a sharp knife, slice the dough into rectangles in the pan. Bake in the preheated oven until golden and firm, about 45 to 60 minutes. Remove and cool.
