Moist Tahini Muffins Recipe: An A-maz-ing Muffin for Mom on Mother's Day Bread/Muffins Snacks

I've created some a-maz-ing tahini muffins using Mighty Sesame Co.’s squeezable organic tahini. The muffins are deliciously moist with a unique flavor of sesame that Mom will adore on Mother's Day, whether for breakfast or a snack.

This delicious muffin recipe is super easy to replicate in your own kitchen. For the muffins you'll need all-purpose flour (you could use gluten-free flour), baking soda, baking powder, salt, butter, tahini, eggs, brown sugar, vanilla extract, sour cream and toasted sesame seeds. The ingredients are mixed together and baked in muffin tins until cooked through.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 stick (1/2 cup) butter, softened
  • 1 cup tahini 
  • 2 eggs
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • toasted sesame seeds

Here's how to make it: 

  1. In a medium bowl whisk flour, baking soda, baking powder and salt. Set aside.
  2. In a large bowl use a handheld mixer to mix butter with tahini. Then mix in eggs, brown sugar, vanilla and sour cream until creamy. Add in flour little by little and use a spoon or rubber spatula to spoon into greased or lined muffin tins.
  3. Top with sesame seeds and bake in a preheated 375-degree F oven for 20 to 25 minutes. Allow to cool for a few minutes before serving.
