I cannot resist trying new seasonings and spice blends. My recent discovery was the Pizza Sprinkle Seasoning Blend from Trader Joe's. Chicken breasts were on the menu for dinner, and I discovered I had some leftover jarred spaghetti sauce in the refrigerator. This pizza chicken recipe was what developed after scavenging the pantry.
This quick skillet chicken dinner has all the flavors of pizza. You'll need boneless chicken breasts, spaghetti sauce, shredded mozzarella cheese, grated Parmesan cheese, a pizza seasoning blend and a Tuscan seasoning blend or dried Italian herbs. The chicken breasts are coated generously in the pizza seasoning then cooked in a little olive oil until just cooked through. Add the spaghetti sauce and heat through, then top the chicken with the cheeses and Italian spices.
There are other pizza seasoning spice blends out there, so experiment until you find your favorite. This Italian-inspired pizza chicken makes two servings, but it can easily be doubled to feed four. Ingredients
- 2 boneless, skinless chicken breasts
- Trader Joe's Pizza Sprinkle Seasoning Blend (or your favorite pizza seasoning blend)
- 1 cup spaghetti sauce
- 1/4 - 1/3 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- Tuscan seasoning or dried Italian seasoning
Here's how to make it:
- Season the chicken breasts liberally on both sides with the pizza seasoning blend. (You could use boneless chicken thighs instead of breasts.)
- Heat a little olive oil in a skillet. Add the chicken breasts and cook until well seared on both sides and just cooked through.
- Add the spaghetti sauce and heat through. (Use your favorite Italian red sauce.)
- Sprinkle with the mozzarella and Parmesan cheese.
- Cover until cheese melts. Sprinkle with Tuscan seasoning and serve. Store any leftover chicken in an airtight container in the fridge and reheat in the microwave. This recipe can easily be doubled for four servings.
