Tabbouleh is a Mediterranean salad recipe that is a must if you're on the Mediterranean diet or just trying to eat healthier. The quick, easy and healthy salad recipe is made with fresh ingredients and is not lacking in texture or flavor.

The main players in tabbouleh are chopped fresh parsley, vine-ripe tomatoes, fresh mint, onion and bulgur. Bulgur is cracked whole-grain kernels of wheat. Bulgur has many health benefits, too. It is packed with vitamins, minerals and lots of healthy fiber.

The only cooking you will have to do with this easy tabbouleh recipe is the bulgur. Cook the bulgur according to package directions and let it cool. To speed up the cooling process, pop it into the refrigerator. Once cool, put it into a salad bowl and add the flat-leaf parsley, chopped tomatoes, onion, fresh mint, lemon juice, olive oil and ground cayenne for a hint of heat. Season with salt and pepper, give it a good stir and refrigerate until you're ready to eat.

If you can't find bulgur, try using orzo, quinoa or couscous. Serve this Mediterranean salad as a side dish with chicken, pork, lamb, beef or seafood or for lunch with garlic bread.

Ingredients

  • 1/4 cup bulgur, uncooked 
  • 2 cups fresh flat-leaf parsley, packed (about 3 bunches)
  • 1/4 cup fresh chopped mint leaves
  • 3 large tomatoes, chopped small
  • 1 onion, chopped small
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • dash of ground cayenne

Here's how to make it: 

  1. Cook the bulgur according to package directions. Cool. 
  2. Mix together the cooled bulgur, parsley, tomatoes, onion, lemon juice, olive oil and dash of ground cayenne. Season with salt and pepper. Refrigerate until ready to serve.
