Quick Creamy Cole Slaw Recipe That Doesn't Feed the Whole Neighborhood Salads Side Dishes

Some recipes just make a lot. We're talking classic potluck recipes like potato salad, macaroni salad and cole slaw. If you just want a little cole slaw and not enough to feed the entire neighborhood, here's a simple recipe. This easy cole slaw recipe makes enough for two or three people. No leftovers and no waste if you have to throw out uneaten portions.

This creamy cole slaw is made with grated or thinly sliced green cabbage, grated or julienned carrot, mayonnaise, apple cider vinegar and a little sugar. Mix all the ingredients together in a bowl, season with salt and pepper and refrigerate until ready to serve. If you want a creamier cole slaw, add more mayonnaise. If you like celery seed in your cole slaw, add a few shakes. Don't like cooking with sugar? Omit it!

Serve this quick cole slaw as a side dish with chicken, pork, lamb or beef. It's delicious with homemade burgers, chicken sandwiches, barbecued chicken, brisket or ribs, and baked ham. If you are feeding more than a few, double or triple the recipe.

Ingredients

  • 2 cups grated or thinly sliced cabbage
  • 1 carrot, grated or julienned
  • 3 tablespoons mayonnaise
  • 2 teaspoons apple cider vinegar 
  • 1/4 teaspoon sugar

  1. Combine all the ingredients in a mixing bowl. Season with salt and pepper.
  2. Toss to combine. Refrigerate to chill before serving.
