10-Minute Skillet Spinach & Mushrooms Recipe Is How to Side Dish Side Dishes Vegetables
We love when two fan favorite ingredients combine to create a new, interesting, quick and delicious side dish. This easy skillet spinach and mushroom recipe is one you won't want to forget. Spinach and mushroom lovers will be smiling from ear to ear. And for those who like quick (quick!) recipes, you can't find a quicker one.
Fresh sliced mushrooms, onion and garlic are cooked in olive oil for a few minutes before adding in the fresh baby spinach. Add handfuls of the spinach at a time and let it wilt before adding more. Season well with salt and pepper, and this easy side dish is ready to be served.
Any mushroom will work for this recipe. Button mushrooms are found in most grocery stores and work well, but if you come across wild mushrooms they would elevate this recipe to dinner party status. Serve this spinach recipe with fish, chicken,beef, pork or lamb.

Ingredients
- 2 tablespoons olive oil
- 4 cups sliced fresh mushrooms
- 1/3 cup chopped onion
- 5 cloves garlic, minced
- 2 bags (5 to 6 ounces) baby spinach
Here's how to make it:
- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and onions. Cook, stirring often, about 2 minutes. Add the garlic and cook 30 seconds.
- Slowly start adding in the spinach and cook, stirring, until wilted and all has been added to the pan. Season with salt and pepper.
