I just love this melt-in-your-mouth butter cookie recipe. I made them for my daughter's classes for the last day of the semester. Someone please stop me from eating them all!

This easy butter cookie recipe has just five simple ingredients: cornstarch, powdered sugar, flour, salt and butter. The cookies bake in the oven for 15 to 18 minutes, until barely beginning to color. These simple butter cookies are the perfect dessert for Christmas or anytime. 

You could make these simple cookies for other holidays (Easter, Halloween, St. Patrick's Day, etc.) by simply changing the color of the sprinkles. So easy and delicious!

Servings: Makes about 60 cookies

Ingredients

  • 1 cup cornstarch
  • 1 cup powdered sugar
  • 2 cups flour
  • 1 teaspoon salt
  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • colored sugar or sprinkles (optional)

Here's how to make it: 

  1. In a mixer with a paddle attachment combine the cornstarch, powdered sugar, flour and salt. Mix for 20 seconds on low. Add the room temperature butter and mix until blended in and dough packs when you grab a handful. 
  2. Roll into 1-inch balls (I use a small ice cream scoop then finish rolling them between my two palms). Place on a parchment-lined baking sheet pan, 2 inches apart. Flatten slightly with your palm, then mark with the tines of a fork. Sprinkle with colored sugar or other sprinkles. 
  3. Bake in a preheated 300-degree F oven for 15 to 18 minutes. They should be very blonde, with no browning.
