Japanese Tare Sauce Recipe: Use This Sweet Soy Sauce Recipe for Basting, Cooking & Dipping Sauces/Condiments

Tare sauce is a thick, sweet soy basting, dipping and cooking sauce from Japan. Japanese tare sauce is often used when grilling meats or vegetables, in soups like ramen, in braising liquids and as a dipping sauce for gyoza, dumplings, sushi, yakitori and other dishes. If you're a fan of teriyaki sauce, you need to try this easy Japanese sauce.

As with any recipe, the ingredients can vary from cook to cook and family to family. The ingredients are simmered until they reduce and thicken, and the flavors intensify. The ingredient measurements in this multipurpose sauce or glaze can be adjusted to suit your tastes. This sauce is also wonderful stirred into Asian noodles and rice.

Servings: Makes about 1 cup

Ingredients

  • 1 cup soy sauce
  • 1 cup mirin
  • 1/2 cup sake
  • 1/2 cup dark brown sugar
  • 2 tablespoons sherry vinegar
  • 6 garlic cloves, minced
  • 1 bunch green onions, roughly chopped (about 6 green onions)
  • 1 2-inch piece of fresh ginger, peeled and sliced
  • 2 tablespoons whole peppercorns

Here's how to make it: 

  1. Put all the ingredients into a saucepan over medium heat. Stir to combine. 
  2. Bring the mixture to a boil, reduce heat and cook until the sauce has reduced by half and coats the back of a spoon, about 15 minutes. Strain through a mesh strainer into an airtight container.
