Ingredients
- 1 cup heavy cream, chilled (it may not whip as well if it’s not cold)
- 2 cups ripe fresh or frozen strawberries, sliced (or berries of your choice)
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- sliced strawberries and/or chocolate sprinkles, for garnish (optional)
Here's how to make it:
- Place strawberries in a medium mixing bowl. Sprinkle with sugar and add vanilla extract, then stir to combine. Mash the strawberries with a fork, leaving some larger pieces. Let strawberry mixture stand for 10 to 15 minutes while strawberries macerate and release their juices.
- In a large mixing bowl, whisk or beat chilled heavy cream until light and fluffy. Be careful not to overbeat. Set aside or chill until ready to use. (If you don't use it right away and it separates, you can whisk/beat it again for a few seconds.)
- Fold about half of the strawberry mixture into the whipped cream. Reserve the remaining strawberries.
- Spoon some of the whipped cream into serving glasses. Top with some of the remaining strawberry mixture and another spoonful or two of the cream. Garnish with a few sliced strawberries and/or some chocolate sprinkles on top, if desired.
- Serve immediately or place in the refrigerator until ready to serve. Store leftovers in an airtight container in the refrigerator.
