"Roasted rice powder is a fun condiment," writes Chef Jet Tila in his cookbook 101 Asian Dishes You Need to Cook Before You Die. "It adds a great nutty, smoky crunch to larb and other dishes. It also soaks up the dressing and binds it to the dish, upping the flavor. I guarantee you have everything you need to make it at home, which is rice and a pan!"

Known as khao khua in Thailand, this toasted rice powder is easy to make. It can also be used as a thickener for soups and stews. I used it in Chef Tila's chicken larb recipe.

Ingredients

Here's how to make it: 

  1. Put the rice into a dry pan over medium-high heat.
  2. Keep stirring as the rice cooks and turns medium brown.
  3. Put it into a blender or spice grinder and process until a powder forms.
  4. Store in an airtight container.
