Recipe Notes

  • Pat the chicken wings dry with a paper towel before adding olive oil and seasonings for the crispiest wings.
  • Store any leftover wings in an airtight container in the fridge for up to three days.

Here's how to make it:

  1. Put the chicken wings into a large bowl. Drizzle with 1 tablespoon of the olive oil and season with salt and pepper. Pour onto a baking rack or baking sheet that's lined with parchment paper. Bake in a preheated 400-degree F oven for about 40 minutes, flipping the chicken halfway through. Turn on the broiler and broil for about 6 to 8 minutes or until browned and crispy.
  2. While the chicken cooks, melt the butter and remaining 2 tablespoons olive oil together in a saucepot. Add the garlic and cook, stirring, 30 seconds. Add half the Parmesan cheese, smoked paprika and crushed red pepper flakes, to taste. Cook, stirring, about 1 minute.
  3. Take the chicken out of the oven and put into a large bowl. Pour the sauce over the chicken and toss to coat. Sprinkle with the remaining Parmesan cheese and chopped parsley.

Well, chicken wings don’t have much flavor on their own. So pile on the sauce. Better use thighs which have a leg up….sorry.

I've had super flavorful chicken wings!!! Most times I don't even need to dip them. I think we do because people like to dip ... especially in blue cheese and ranch dressing. Hope you try these and they change your mind. FredRickson
