3-Ingredient Harissa Chicken Recipe: Moist & Slightly Spicy, This Chicken Breast Recipe Is a Keeper Poultry Dinner

When my husband and I get serious about losing a few pounds, the chicken breast flies in my kitchen (not literally!). Chicken breast for dinner can get boring if you don't change things up sometimes. This easy harissa chicken breast recipe is just three simple ingredients that combine to make a juicy, slightly spicy, fast meal. It's my new favorite way to cook chicken breast.

The harissa cooks down into the olive oil and chicken drippings to create a fabulous pan sauce that I drizzled over quinoa. Loved. It. Next time I will add a little more olive oil and harissa so there's more of it for drizzling.

Ingredients

Here's how to make it:

  1. Heat a little olive oil in a skillet. Season the chicken breast with salt and pepper. Put the chicken into the hot pan and cook until golden brown on both sides and almost cooked through, about 6 to 10 minutes depending on thickness of chicken.
  2. Spoon about 1 tablespoon of harissa paste onto the top side of the chicken breast (use however much you want). Spread it to cover the whole breast. Cook about 1 minute. Flip the chicken over and coat the other side with harissa. Cook until it melts and cooks onto the chicken, about 1 more minute.
