"Fried" Summer Tomatoes Recipe With Garlic Is Ready in 5 Minutes Vegetables Side Dishes

Isn't it wonderful that we can get fresh tomatoes are year 'round? This easy "fried" tomato recipe doesn't have a breading like fried green tomatoes, so it's lighter and healthier. 

The tomatoes are quickly cooked in olive oil and garlic, and are a tasty side dish for chickenpork, beef, or served over lettuce for a fresh salad. You could even serve them over pasta.

Ingredients

  • 1 large tomato, sliced thick
  • 3 - 4 cloves garlic, pressed or minced
  • 1 tablespoon olive oil
  • 1 tablespoon minced fresh herbs (optional)

Here's how to make it: 

  1. Heat the olive oil in a pan over medium heat. Add the tomato slices, sprinkle with sea salt and pepper, and cook for about 1 minute.
  2. Flip the tomatoes and add the garlic and herbs, if using. Cook 1 more minute.
  3. Flip the tomatoes again to coat with the garlic and cook about 1 more minute. Drizzle with a little olive oil and sprinkle with more sea salt and pepper before serving, if desired.

Living in Tucson, Arizona we have fresh, ripe (backyard) tomatoes all year. Doing this treatment, and not wanting to worry about fresh herbs all the time, just grate some tomato over some dry Italian herbs, in a small cup, wait an hour or so, and put them on the cooked tomatoes.
