If you have okra growing in your garden or have seen the piles of fresh okra at the grocery store or farmers market, you're going to love this fried okra recipe. Like fried green tomatoes, fried okra is a southern staple. This crispy fried okra recipe is easy to make and can be served instead of french fries or mashed potatoes as a side dish, or as a fun appetizer with remoulade sauce or your favorite dipping sauce.

The okra is trimmed and cut into rounds before soaking in beaten eggs. Cornmeal and flour is combined in a bag or bowl (it's easier to do in a brown bag) and seasoned with salt, pepper and cayenne pepper (if you want some heat). Put the okra into the bag and shake until it's completely coated in the seasoned cornmeal. Put the breaded okra into hot oil in a skillet and cook until golden brown and crispy. Drain on a paper towel, and don't forget to immediately season with a little sea salt. Delicious!

Okra is healthy, too! Okra is rich in vitamin A, vitamin C, antioxidants, magnesium, folate, vitamin A, vitamin K and vitamin B6. Okra may reduce your risk of cancer, diabetes, stroke and heart disease. Plus it's high in fiber and has some protein, too. Ingredients

• 1 pound fresh okra, stems trimmed and cut into rounds
• 2 eggs
• 1 1/2 cups yellow cornmeal
• 1/4 cup flour or gluten-free flour
• cayenne pepper, to taste (optional)
• vegetable oil, for frying

Here's how to make it: 

1. Whisk the eggs in a bowl. Season with salt and pepper. Put the cut okra into the eggs and set aside.
2. Combine the cornmeal and flour in a bag or large bowl. Season with cayenne pepper, to taste, and salt and pepper. 
3. Heat about 1 inch of oil in a frying pan to 375 degrees F. 
4. When the oil is hot, remove the okra from the egg with a slotted spoon. Shake off the excess egg then put into the cornmeal mixture. Shake or dredge the okra then put into the hot oil. Do not crowd the pan. (Make sure the oil is hot before frying the okra or it may turn out greasy.)
5. Fry the okra until golden brown, about 3 minutes. Remove to paper towels and sprinkle with sea salt, if desired. Repeat with remaining okra. (Season the okra with a little salt as soon as it comes out of the hot oil so it sticks.) Store any leftovers in an airtight container in the fridge. Reheat in the air fryer or in a low oven.
