Born and raised in Texas, California became my home a few years ago. Queso is a staple in Texas homes and restaurants, but it's hard to find here. Really hard. My mom didn't actually believe me until we searched for it on her first trip to visit me.
When I get homesick and need some Mexican cheese dip in my life, this is my go-to queso recipe. With ground meat, three cheeses and cream, it's a Texas two-step above most Mexican cheese dip recipes.
Here is your shopping list for this creamy, cheesy, flavorful queso dip recipe: ground beef or ground turkey, taco seasoning, red onion, processed cheese (aka Velveeta), a can of tomatoes with green chiles, pepper-jack cheese, white cheddar cheese and heavy cream. For serving, you can also grab pico de gallo (or make homemade pico de gallo), fresh cilantro and don't forget the tortilla chips for dipping.

Ingredients
- 1 pound ground beef or ground turkey
- 1 ounce (1 packet) taco seasoning
- 1/2 diced red onion
- 16 ounces processed cheese
- 10 ounces (1 can) tomatoes with green chiles, undrained
- 1 cup shredded pepper-jack cheese
- 1 cup shredded white cheddar cheese
- 1/4 cup heavy cream
For Serving
- pico de gallo
- fresh chopped cilantro
- tortilla chips
Recipe Notes
- I used ground turkey, but ground beef is usually used in queso dips. Use whatever you like!
- I used Velveeta processed cheese loaf.
- I used Rotel brand tomatoes with green chiles.
- Store the queso in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Brown the meat in a skillet. Add the taco seasoning packet and following package directions. Set aside.
- In the same pan, cook the red onion until soft.
- Add the processed cheese and tomatoes with green chiles. Stir until melted.
- Add the pepper jack and white cheddar. Stir until melted.
- Add the meat back into the pot.
- Pour in the heavy cream. Cook until heated through. If too thick, add more heavy cream until desired consistency.
- Transfer to a serving dish and top with pico de gallo and cilantro. Serve with tortilla chips.
