Ingredients

• 1/2 cup flour (all-purpose or 1:1 gluten-free flour)
• 1 cup brown sugar, packed
• 1 cup chopped pecans
• 2 eggs
• 2/3 cup butter, melted

Here's how to make it:

1. Combine the flour, sugar and pecans in a bowl. Whisk to combine. (Change things up by making these muffins with walnuts or almonds.)
2. In another bowl, whisk the eggs until foamy. Add the butter and mix well.
3. Add the wet ingredients to the dry until just combined.
4. Pour the batter into muffin tins lined with cupcake liners. Fill each muffin tin almost full with the batter. 
5. Bake in a preheated 350-degree F oven for about 20 to 25 minutes or until a toothpick comes out clean. For the moistest muffins, do not overbake. Store the muffins in an airtight container in the counter.
