An Anzac biscuit is a sweet, crunchy cookie that's popular in Australia and New Zealand. The key players in the biscuit are oats, coconut and golden syrup, which is a sweet amber syrup used for baking in the U.K. 

If you can't find golden syrup, molasses mixed with honey or corn syrup can be substituted. You will love this easy, delicious cookie for dessert, or as an anytime snack

Ingredients

Here's how to make it: 

  1. Combine the flour, rolled oats and sugar in a bowl. Set aside.
  2. In a saucepot, combine the butter and golden syrup or replacement. Cook on low until butter melts. Add the baking soda and stir. Turn off the heat. 
  3. Add the butter mixture to the flour. Stir until just combined. 
  4. Roll the dough into balls and place on a parchment paper-covered baking sheets. Flatten the cookies into rounds with your fingers. 
  5. Bake in a preheated 350-degree F oven for about 15 minutes or until golden brown.
