Crack Chicken Spaghetti Soup Recipe May Go Down in History (30 Minutes) Soups Went Viral Dinner Pasta Chicken Recipes

Any recipe with crack in the title I'm going to try. Especially if it's a soup recipe, chicken recipe, dip recipe or pasta recipe. This is my version of the crack chicken soup recipe that went viral. Crazy viral. Will it go down in history? Don't know, but it is delicious. 

This creamy pasta soup doesn't have many ingredients at all. To make this soup you will need cooked, shredded chicken, olive oil, onion, celery, carrots, dry ranch seasoning, chicken broth, cream of chicken soup, spaghetti noodles, half and half and cheddar cheese. The original recipe called for bacon. While I love bacon, I omitted it because it sounded like overkill to me. Overall, this chicken and pasta soup recipe is a keeper. 

Serve this creamy chicken soup for lunch or dinner with a side salad or crusty bread.

Ingredients

• 3 cups cooked shredded chicken (I used chicken breast)
• 1 tablespoon olive oil
• 1 small onion, chopped
• 2 stalks celery, diced
• 2 carrots, diced
• 1 ounce (1 packet) dry ranch dressing mix (I used Hidden Valley Ranch)
• 32 ounces (1 box) chicken broth
• 10 ounces (1 can) cream of chicken soup
• 4 - 8 ounces spaghetti noodles (use 4 ounces for a soupier soup and 8 for a thicker, denser soup)
• 1 cup half and half or whole milk (I used half and half)
• 1 cup shredded sharp cheddar cheese

Recipe Notes

• Next time I will reduce the amount of spaghetti noodles to 4 ounces so it's soupier.

• The original recipe called for crispy, crumbled bacon. If you want to use it, just stir it in at the end of cooking.

• Store any leftovers in an airtight container in the fridge. Reheat in the microwave. You can add more milk or half and half to thin it out a bit. 

Here's how to make it: 

1. Heat the olive oil in a large soup pot. Add the onions, celery and carrot. Cook until soft, about 5 minutes.
2. Add the dry ranch seasoning and stir to coat the vegetables.
3. Pour in the chicken broth and cream of chicken soup. Bring to a boil.
4. Add the spaghetti noodles and cooked chicken. Cook about 15 minutes or until spaghetti noodles are tender.
5. Add the half and half and cheddar cheese. Cook until cheese has melted. Season with black pepper, to taste. (You probably won't need salt.)
