Here's how to make it: 

  1. Put the pie crust into a pie plate. Prick the bottom all over with a fork. Bake in a preheated 325 degree F oven for about 10 minutes or until almost cooked. 
  2. Combine the cornstarch and sugar in a bowl. Whisk to combine. 
  3. In a saucepan, melt the butter. Add the cornstarch mixture and whipping cream. Cook over medium heat, stirring constantly, until it thickens, about 3 to 4 minutes. Turn off the heat and add the vanilla.
  4. Pour the filling into the partially cooked pie shell. 
  5. Pour the melted butter over the pie filling and then sprinkle with the cinnamon sugar. 
  6. Bake for about 25 minutes, then broil for about 1 minute to brown the top. Remove from the oven and cool before refrigerating until completely chilled.
