This easy baked zucchini recipe has stood the test of time. Here is your super short and simple shopping list for this zucchini recipe: fresh zucchini, a small can of tomato sauce and shredded mozzarella cheese. Those three ingredients bake up and create a side dish you'll be making over and over again.

  • 4 - 5 zucchini, sliced into rounds
  • 1 small can (8 ounces) tomato sauce
  • 1 - 2 cups shredded mozzarella cheese

  • You could top the zucchini with grated Parmesan instead of mozzarella.
  • Grate your own cheese. Freshly grated cheese melts up better than prepacked shredded cheese.
  • Try this recipe with yellow crookneck squash.
  • You could stir some Tuscan seasoning or dried Italian seasoning into the tomato sauce.

Here's how to make it:

  1. Put the zucchini into a baking dish. Season with salt and pepper.
  2. Pour the tomato sauce over the zucchini. Toss to coat.
  3. Cover and bake in a preheated 350-degree F oven until zucchini is tender, about 20 to 30 minutes.
  4. Top with the shredded cheese. Bake another 5 minutes.
