- 1 1/2 cups flour
- 1 1/2 cups cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- dash of salt
- 3 eggs
- 1/4 cup melted butter
- 1 cup buttermilk
- 2/3 cup water
Here's how to make it:
- Combine the flour, cornmeal, sugar, baking powder and salt. Whisk to combine.
- In another bowl, combine the eggs, butter, buttermilk and water.
- Add the wet ingredients to the dry ingredients until just combined.
- Spray a large skillet or griddle with nonstick cooking spray or lightly butter. Pour in the batter and cook about 3 to 4 minutes per side or until cooked through.
