Ingredients
- 2 cups flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- dash of salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups milk or nut milk
- 1 cup mashed sweet potato
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
Here's how to make it:
- Combine the flour, brown sugar, baking soda, baking powder, salt, cinnamon, ginger and nutmeg in a bowl.
- In another bowl, mix together the milk, sweet potato, oil, eggs and vanilla.
