Ingredients

Here's how to make it:

  1. Combine the flour, brown sugar, baking soda, baking powder, salt, cinnamon, ginger and nutmeg in a bowl.
  2. In another bowl, mix together the milk, sweet potato, oil, eggs and vanilla.
  3. Add the wet ingredients to the dry ingredients. Stir until just combined.
  4. Spray a waffle iron with nonstick cooking spray and preheat. Cook the waffles according to manufacturer's directions.
