Easy Chicken Vegetable Stir-Fry Recipe: This Tangy Stir-Fry Pasta Is Topped With Flavorful Feta Pasta Dinner

Take advantage of the summer harvest by making this easy vegetable and chicken stir fry. Served over your favorite pasta and topped with flavorful feta cheese, you’ll have a tangy, healthy and satisfying meal on the table in about 30 minutes.

Ingredients

  • 1 box (16 ounces) of your favorite pasta (I used rotini)
  • 2 chicken breasts, diced
  • 2 ripe tomatoes, diced
  • 1 large red, yellow or green pepper, diced
  • 1 zucchini, diced
  • 2 cups carrots, diced
  • 1 broccoli crown, diced
  • juice of 1 lime
  • 3 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 3 ounces feta cheese, diced

Here’s how to make it:

Cook pasta according to package directions. While pasta is cooking, add lime juice, olive oil, apple cider vinegar, garlic and soy sauce to a large sauté pan or wok. Add chicken, carrots and broccoli and stir fry for 5 minutes or until chicken is mostly cooked. Add peppers, zucchini and tomatoes. Stir fry 5 more minutes or until chicken is cooked through and vegetables are crisp-tender.

Serve over pasta. Top with diced feta cheese.
